For various reasons (namely that I don’t eat them fast enough and they start to go bad), I usually have frozen bananas in my freezer. Using them up isn’t usually a problem, as I make a mean banana-blueberry bread (or muffins). But for some reason, I got a hankering to make banana pancakes. Why? I don’t know except I do know this: Knock, knock. Who’s there? Banana. Banana who? Knock knock. Who’s there? Banana. Banana who? Knock knock. Who’s there? Banana. Banana who? Knock knock. Who’s there? Orange. Orange who? Orange you glad I didn’t say banana again?
Oh, and here’s the recipe:
1/2 c flour
1.5 t sugar
1 t baking powder
1/8 t salt
1 egg
1/2 cup milk
1 mashed up banana
1 T vegetable oil
Mix the dry ingredients. Mix the wet ingredients. Mix them together. Using the oil, fry up the pancakes. The recipe made about 6 pancakes, more than enough for Jeff and me.
Oh and by the way–How do you spell banana? B-a-n-a-n-a-n-a-n-a-n-a-n-a…I know how to spell it, but I don’t know when to stop!
